Ok, so I’m not the best cook in the world(or even my home for that matter).
In an effort to become more domestic and get creative with my families summer meals, I’ve decided to try and cook more lately.
I’m doing ok, but I’m horrible at finding good recipes!

randi - Easiest cheesecake ever. 1 package softened cream cheese, 1 cup sugar (I use about 3/4 depends on how sweet ya want it) 3/4 tub of cool whip, 1 graham cracker crust. Mix your ingredients on medium speed until smooth and spoon into your crust. Top with any fruit you like or dive into it plain. 10 minutes tops!

Allison - Easy Ham & Potato Soup INGREDIENTS * 3 1/2 cups peeled and diced potatoes * 1/3 cup diced celery * 1/3 cup finely chopped onion * 3/4 cup diced cooked ham * 3 1/4 cups water * 2 tablespoons chicken bouillon granules * 1/2 teaspoon salt, or to taste * 1 teaspoon ground white or black pepper, or to taste * 5 tablespoons butter * 5 tablespoons all-purpose flour * 2 cups milk DIRECTIONS 1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper. 2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes. 3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

Stace - Oops, forgot to mention. I used only about 1 Tablespoon of the chopped black olives. Don't use the whole can unless you really like olives. If using sliced, about 1/3 of the can should do it. Ok, bye :)

Stace - Quick and Sassy Chicken Salad I made up from leftovers: Chopped chicken, chopped roasted or grilled asparagus, 1can chopped & drained (plain; not marinated) artichoke hearts, chopped red bell pepper, chopped purple onion, chopped (or sliced-in the can) black olives, chopped almonds, cracked pepper, sea salt, Vidalia Onion salad dressing, and any fresh herbs (sweet or spicy basil, chives, etc.). Stir all ingredients together. Refrigerate at least a couple of hours for best taste. The dressing helps to wilt the veggies a bit. Can spoon into avocado or tomato halves for low fat recipe. Add pasta of choice or wild rice to feed more peeps. Exchange Vidalia dressing for a package of Pesto sauce mix (pkg tastes fresher than already mixed ones in jar)and Pine Nuts instead of almonds for an Italian salad. Exchange Black Olives and Artichokes for Water Chestnuts and Crispy Asian Noodles and Asian Sesame Dressing. Exchange Black Olives, Asparagus, and Artichokes for Green Apples and Cranberries and Poppy Seed Dressing or Cranberry Vinagrette.

Maloree H - Ok... this is a snack that is INCREDIBLE!!! They have a lot of flavor... Ranch Oyster Crackers 2 bags oyster crackers 1 pkg. Hidden Valley Ranch dressing 3/4 c. oil 1/2 tsp. lemon pepper seasoning 1/2 tsp. dill weed 1/2 tsp. garlic powder 1/2 tsp. onion powder Mix all but crackers together. Pour over crackers, mix well. Let sit for at least 2 hours. Cover lightly. (Can be based at 275 degrees for 15-20 minutes). It's really easy! And so tasty!

Amber C. - Okay not only is this good, but it's cheap! It's called cowboy stew and I got it from a friend, who got it from a friend and so on... 1lb. lean ground beef (brown) 1 lrg. Can of stewed tomatoes (or 2 cans if you like it juicy) 1 can of corn (or 2 can's if your a corn nut like me) 1 can of kidney beans 1 can of pinto beans 1 pkg of taco seasoning 1 pkg or hidden valley buttermilk ranch powder. mik to gether and let simmer for 15 min. for a little extra special* add crispy tortilla strips. or a dollop of sour cream on top. enjoy

Sara B. - Honey-Baked Chicken over Basmati Rice with Broccoli Smothered in Garlic Oil - one of my favorite meals. Honey-baked Chicken from the More With Less Cookbook Preheat oven to 350 degrees. 2 1/2lbs. chicken pieces 1/3 cup melted butter or margarine 1/3 cup honey 1 tsp. salt 1 tsp. curry powder 2 Tbsp. prepared mustard (I like spicy brown) Place chicken pieces in a baking dish. Mix all the other ingredients together well and pour them over the chicken. Bake for 1 hour and 15 minutes at 350, basting the chicken with the sauce every 15-20 minutes. Serve over fragrant basmati rice (or your favorite rice). The broccoli dish comes from Classic Indian Cooking by Julie Sahni. Broccoli Smothered in Garlic Oil 1 1/2 lbs. broccoli spears, rinsed and peeled 3 Tbsp. light vegetable oil 8-10 cloves garlic, peeled 1/2 tsp. turmeric 1 tsp. Kosher salt Heat the oil in a large frying pan (cast iron works well). The pan should be able to fit the broccoli in a single layer. Saute the garlic cloves whole in the heated oil until golden, about 1-2 minutes. Add the turmeric and immediately follow with the broccoli. Let sizzle undisturbed for 1 minute, then sprinkle on the salt. Turn the broccoli carefully and saute for an additional minute. Reduce heat and cook, covered, until the broccoli is cooked but still crisp and dark green (about 8-10 minutes). Uncover, continue cooking until moisture evaporates and the broccoli spears are well glazed. Check for salt and serve immediately.

Kallie - I'm a sucker for appetizers. This spinach-artichoke dip is my favorite: * 1 (8 ounce) package cream cheese, softened * 1/4 cup mayonnaise * 1/4 cup grated Parmesan cheese * 1/4 cup grated Romano cheese * 1 clove garlic, peeled and minced * 1/2 teaspoon dried basil * 1/4 teaspoon garlic salt * salt and pepper to taste * 1 (14 ounce) can artichoke hearts, drained and chopped * 1/2 cup frozen chopped spinach, thawed and drained * 1/4 cup shredded mozzarella cheese Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish. 2. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt and pepper. Gently stir in artichoke hearts and spinach. 3. Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned. Enjoy!

Janet McKnight - okay, i'm stealing from someone else's blog. I'm not even going to lie. I have made this http://smittenkitchen.com/2009/05/raspberry-buttermilk-cake/ recently, and it was just as yummy as it looked. a PERFECT summer no-special-occasion or any-special-occasion cake. (i used strawberries, and they sunk to the bottom a bit making pan-removal tricky. this is no reason to panic. i scraped of the bits that remained, stuck them on the bottom, flipped it onto the plate and pretended like nothing funny had happened :)
